Use in recipes such as galettes, blinis, soba noodles, soda breads, pita breads, biscuits, banana loaf, tea cakes, cookies, crackers, waffles and muffins. For pancakes, combine 1 cup buckwheat flour with 2 grated apples, 1 cup milk of choice, 2 teaspoons baking powder, and either 2 eggs or 2 tablespoons flax meal. Let stand for a few minutes, then cook in a greased pan until one side is cooked, flip, and cook the other side.
