Base
35g Almond Meal
15g Oat Flour
20g Coconut Flour
50g Vanilla bRaw Protein Powder
20g Natural Sweetener
100ml Almond Milk
Salted Caramel
50g Dates (soaked in hot water for 30min and then drained)
40g Smooth Peanut Butter
20g Natural Sweetener
5g Salted Caramel bRaw Protein Powder
Pinch Salt
25ml Almond Milk
Chocolate Layer
20g Sugar-Free Chocolate
1/2 Tsp Coconut Oil
STEP 1
Preheat oven to 170C. Combine all the base ingredients until a thick batter forms and spread batter evenly in a silicon or lined baking tin.
STEP 2
Bake for 10-13min or until golden brown and stick comes out clean when poked. Allow base to cool whilst making caramel layer.
STEP 3
To make the caramel layer, combine all the ingredients in a blender and blend until smooth.
STEP 4
Spread caramel layer over cooled base and refrigerate for 30-60min to allow caramel to set.
STEP 5
Once caramel layer has set, melt chocolate and coconut oil for 30 seconds in the microwave. Do not over microwave this as it will make your chocolate layer not crunchy (there should be clumps of unmelted chocolate still and you should stir the chocolate to melt it instead of re-microwaving)
STEP 6
Drizzle chocolate on top of caramel layer and place in freezer for 30 minutes or until chocolate has set. If you are making twix bars, triple the chocolate layer mixture and cut the bars up before dipping it into the chocolate.
