High protein, low calorie pancakes made from sweet potato, whey protein and egg whites. These are great for anyone looking to use their diet foods in a new and inventive way to make delicious sweet treats. For a lower calorie version swap sweet potato with butternut pumpkin for a great textured, sweet high protein pancake.Â

1 cup Mashed Cooked Sweet Potato
1 scoop Genetix Whey Vanilla Ice Cream Protein Powder
1/2 cup Liquid Egg Whites
1 tsp cinnamon (to taste)
STEP 1
Steam sweet potato or cook in your preferred method for mashed potato
STEP 2
In a bowel mix mashed sweet potato and protein powder until a smooth consistency is formed
STEP 3
Once combined, slowly fold in egg whites and cinnamon. Make sure the mixture is cold during this process or the egg whites will cook and make the consistency lumpy
STEP 4
Cook Mixture in a non-stick pan on a low heat (too high it will burn). Make smaller palm size pancakes with this mixture as it will be easier to cook and manage
STEP 5
Add your desired toppings but this goes great with yoghurt, syrup and something crunchy like nuts, seeds or granola
