Thought I’d throw in a good old fashioned omelette, with a hint of the sea! Shrimp are not only tasty, but offer a good source of protein to a meal. This omelette is really tasty.

10 Shrimp, Large
6 Medium Eggs
4 Tomatoes
1 Handful Spinach
1/4 Onion
Pinch Salt (or to taste)
Pinch Parsley (or to taste)
Pinch Cayenne (or to taste)
STEP 1
Chop the onion and add to medium heat frying pan, adding salt to taste, cook until translucent.
STEP 2
Add spinach to the pan, and chopped tomatoes.
STEP 3
Once spinach wilted slightly, add shrimp to pan.
STEP 4
Crack eggs into bowl, whisk together, and pour over ingredients in pan.
STEP 5
Add Cayenne, to taste.
STEP 6
Place lid on pan and slowly cook omelette over medium heat for 6-8 minutes, less time if you prefer slightly runny, more time if you prefer solid. Omelettes are very individual, but 6-8 minutes over a medium heat (with lid on) tends to make for a pretty yummy omelette.
STEP 7
Either flip omelette over to make a “calzone” style serving, or serve as whole circle on plate, adding parsley as a garnish.
STEP 8
Note - Prior to making omelette, you’ll need to use half the ingredients per person. The ingredients list allows for 2 servings.
