Healthy Dessert… say what?! It’s packed with sesame seeds – a great source of CALCIUM, which is essential for strong bones and teeth! Plus dates, loaded with fibre (6g in fact!), assisting in the maintenance of a healthy digestive tract and counts towards the recommended 2 serves of fruit per day for Australian adults.

1 cup Pitted Dates
1 cup Raw Almonds
1/2 cup Shredded Coconut
1/4 cup Cacao Powder
1/2 cup Buckwheat Grouts
2 1/2 cups Medjool Dates or Dried Dates (soaked for 10 minutes and drained)
1/2 cup Tahini (hulled or unhulled)
STEP 1
Add all “base” ingredients into food processor and process until mixture is combined (about 2 minutes) - pitted dates, raw almonds, shredded coconut, cacao powder, buckwheat grouts
STEP 2
Line a circle ‘pop out’ baking tin with baking paper
STEP 3
Spoon mixture into tray making a flat and even surface and set aside
STEP 4
To make caramel, place all “caramel” ingredients (dates and tahini) into food processor and process until mixture in smooth and creamy. This will take 3 - 5 minutes
STEP 5
Pour caramel mixture into baking tray over base and smooth out with a spoon
STEP 6
Place the cake into the freezer for at least 1 hour to set
STEP 7
When you’re ready to eat, remove the pie from the freezer and slice using a hot, sharp knife
STEP 8
Decorate as you wish!
