There is no protein pudding like this!! Giant Sports Delicious Whey protein is one of the best proteins for cooking due to its pudding like consistency and it very rarely overcooks. Toppings are not even necessary, just add Walden Farms maple syrup for a lower calorie option.Â

40g Giant Sports Delicious Whey
35g Egg Whites
120g Butternut Pumpkin
3g Wards Baking Powder
5 drops Hermesetas Liquid Stevia
25g Peter’s No Sugar Added Vanilla Ice Cream
2g Shredded Coconut
STEP 1
STEP 2
Peel and chop butternut pumpkin into small cubes and steam until soft
STEP 3
Mash or blitz pumpkin into a smooth consistency and place to the side
STEP 4
Mix all dry ingredients with wet ingredients in a small bowl, whisking together until consistency resembles a thick batter consistency
STEP 5
Lightly coat 2 ramekins or a small coffee mug with coconut oil spray and place 98g of batter in each dish
STEP 6
Microwave on high for 1min 20seconds (some protein powders require less)
STEP 7
Remove from microwave and place a small scoop of ice cream on top followed by a sprinkle of shredded coconut
