Delicious fluffy high protein, low fat mini donuts made with pumpkin, whey and oats. This recipe is also interchangeable in cupcake tins and cooks well with virtually all protein powders but is best suited to protein blends with whey and casein protein sources. For a lower calorie option, use walden farms calorie free maple syrup, cinnamon powder and stevia sugar to reduce the fat content by over 50%.Â

30g Genetix Lean Whey
50g Uncle Toby’s Rolled Oats
150g Steamed Pumpkin
30g Plain Flour
140g Egg Whites
5g Wards Baking Powder
5g Imitation Vanilla Essence
15 Drops Stevia Liquid
40g Aldi Westcare Manhattan Light Cream Cheese
5ml Imitation Vanilla Essence
4 Drops Stevia Liquid
2g Brown Sugar
Cinnamon (to taste)
STEP 1
STEP 2
Peel and chop up pumpkin into small cubes, steaming until soft.
STEP 3
Dry blend oats until they have formed a fine powdered consistency
STEP 4
Mix all dry ingredients together in a large bowl
STEP 5
Mash or blitz steamed pumpkin into a smooth paste
STEP 6
Separate egg whites from yolks (approx. 4 large eggs)
STEP 7
Mix all wet ingredients through dry ingredients and whisk for 1-2 minutes or until it reaches a smooth consistency
STEP 8
Spray donut mould/baking try with a light coating of coconut oil
STEP 9
Place 15g of mixture into the mini donut mould (If you do not have a donut mould handy, try using a baking tin with a donut hole in the middle, however serving sizes may vary.)

Cook for 1minute in the donut press

Remove donuts and place on a baking tray to cool

In a small bowl mix cream cheese with stevia and vanilla essence until a smooth texture is smooth
STEP 15
In a separate small bowl mx sugar with cinnamon to your desired taste
STEP 16
Once cooled, coat mini donuts with cream cheese frosting and sprinkle with cinnamon sugar.

Devour donuts like a kid at Easter eating chocolate.
