1 Cup Overripe Bananas, Mashed
4 Small Carrots, Grated
1/2 Cup Maple Syrup or Alternative Sweetener
2 Eggs
1 Packet Eat Learn Flourish Banana Chia Superfood Muffin Mix (Ingredients: almonds, buckwheat flour, chia seeds, cinnamon & bi carb soda)
250g Reduced Fat Ricotta
1-2 Teaspoons Cinnamon
2 Teaspoons Vanilla Extract
2 Teaspoons Maple Syrup
1/2 Cup Walnuts, Chopped
2 Teaspoons Flaked Almonds (Optional)
STEP 1
Preheat oven to 180 degrees Celsius and line a larger cake tin or a 1-inch deep baking tray with baking paper.
STEP 2
Follow packet instructions for the Banana Chia Superfood Muffin Mix, stopping before dividing into muffin cases.
STEP 3
Add grated carrots to the bowl and stir until combined.
STEP 4
Pour mix into prepared baking tin and place in the oven, baking for 30 minutes or until a skewer comes out clean.
STEP 5
When baked, remove from oven and allow the cake to cool.
STEP 6
To make the icing, add all ‘icing ingredients’ to a mixing bowl. With an electric beater, beat mixture until light and fluffy (about 2-3 minutes).
STEP 7
Once the cake has cooled completely, scoop icing mixture onto cake and distribute evenly using a spoon or knife.
STEP 8
Decorate with walnuts and serve.
