Each piece is only 110cal?! YES! Nutrient-packed with protein and a good serving of fibre. ELFS fruit bread is made with Teff, which is a food staple in Ethiopian cuisine that’s packed with vitamin c (think prevention of colds), iron (helps fight fatigue) and dietary fibre (keeps us fuller for longer). Not sure where to find Teff, simply substitute for a whole-wheat flour or spelt.

2 cups Diced Apples
1 1/2 cups Mashed Banana
3 tsp Cinnamon
1 1/4 cups Teff flour (can substitute for whole wheat flour or spelt flour)
2 tsp Baking Powder
1 tsp Baking Soda (sodium bicarbonate)
3 Eggs
1/2 cup Oil (rice bran/ coconut)
STEP 1
Line a bread tin with baking paper and preheat oven to 180 degrees
STEP 2
Whisk eggs, baking powder, baking soda, oil and cinnamon together
STEP 3
Dice apple and mash banana, add to liquid
STEP 4
Add remaining ingredients and fold mixture (gently stir, you don’t want to over stir because this makes the bread dense)
STEP 5
Pour into bread tin and even out with a spoon. Place in oven for 55 minutes, inserting a skewer to make sure it comes out clean
STEP 6
Cool on an airing rack and serve
