High protein, low calorie pancakes made with banana, whey protein and egg wites. This is a low dairy, low lactose protein pancake formula with great caramelised sweetness from the banana. For a lower calorie pancake version try using only egg whites and save those calories for dry pan fried almonds for delicious nutty topping. Make sure you have a great spatula to flip these muffins as the banana can sometimes be a little flimsy.

2 Whole Eggs
6 Egg Whites
2 Medium Ripe Bananas Mashed
1 Scoop Genetix Whey Vanilla Ice Cream Protein Powder
1/4 Cup Water
STEP 1
Whisk whole eggs and egg whites together.
STEP 2
Mush up ripe banana in a bowl before slowly mixing protein powder through the banana.
STEP 3
Once combined fold through egg mix in with the banana. If the consistency seems too thick and dough like add small amounts of water and stir slowly to the desired texture.
STEP 4
Cook Mixture in a non-stick pan on a low heat (too high it will burn). Make smaller sized pancakes with this mixture as it will be easier to cook and manage.
STEP 5
For a low calorie topping add Walden Farms calorie free maple syrup, blueberries and Greek yogurt
